Tajine el khoukh is a distinctive traditional Algerian dish.
It is famously nicknamed “the eye deceiver,” because it looks like a peach fruit, yet it is in fact a savoury dish.
Ingredients
- Chicken
- Potatoes
- Minced chicken
- Chopped onion
- Smen (clarified butter)
- Chickpeas
- Parsley
- Spices (salt, black pepper, cinnamon, ginger)
- Oil for frying
- Chicken stock or water (for the sauce)
Preparation
- Boil the potatoes, then mash them and shape them into peach-like pieces (stuffed balls), then fry them in oil.
The stuffing is made with: minced chicken, onion, salt, cinnamon, black pepper, and ginger, then sautéed in smen.
- In the tajine, add smen, chopped onion, chicken pieces, chickpeas, and the spices mentioned above.
Let it sauté, then add chicken stock or water for the sauce over medium heat until fully cooked.
Serving
Place the chicken pieces in the middle of the dish, arrange the “peaches,” then add the sauce and chickpeas.
For decoration, place a mint leaf on each “peach” to complete the look.
